On 01.02.02, I was diagnosed with metastatic breast cancer. Too late for surgery, I had chemotherapy, which failed. In May the chemotherapy was changed and I was soon in remission which was celebrated and welcome and lasted nine years - until October 2011. There was progression in 2011 so more treatment was indicated and I am now back in partial remission. But I'm not only a cancer patient - I also enjoy my family, walk my dogs and am learning to draw and paint. Life is good!

The kitchen window

I have most of today off so can work from home.  I always have a gazillion things to get done, but at this time of the year it's a gazillion squared.  So far, we're pretty much on schedule so Christmas may proceed!

With four hens producing now I'm finding more and more ways to use eggs. Take custard, for example.  I only made custard one other time in my life -- about 40 years ago, I'm serious -- but it uses three large or five small eggs so has become a refrigerator staple. I figure the nutmeg is full of antioxidants and the rest is egg and milk (I forget to think of the sugar) so it's healthy, right?

Ironically, I almost never eat eggs as eggs anymore -- only in something -- and that's a major shift for me.  I got squeamish.  There's something about looking out the kitchen window and thinking that the egg I'm holding in my hand was in that hen's body just 20 minutes ago.....

  1. Maybe if you put them in an egg carton and leave them in the fridge for a couple of days you could eat them as eggs? How about an angel food cake (they use 12 large eggs) or sponge cake? Mmmm. I love custard though especially with the burnt sugar as in the Mexican flan.

  2. I wish I lived closer to you because I would buy some eggs from you. I live in San Jose area which is too far to drive for eggs.
    For health reasons, I've learned to eat egg whites most of the time instead of the whole egg. The whites are full of protein and really fill you up. I will have one or two yolks each week. I am sure your friends and neighbors will love your fresh eggs.

    I love reading your blog and I think you are an amazing person.
